One of the quickest and easiest pasta dish I have made in recent past. Its a breeze to make and one of Nehal’s favorite dish. Walnuts are a rich source of omega 3 fatty acids, heart-healthy monounsaturated fats and known to decrease cholesterol.

These days Nehal is back from tennis class earlier than usual since he’s scheduled for late afternoon class this winter season. Usual dinner time is 6.45 pm but with change in schedule, dinner has to be served by 6.15 pm since he’s home hungry and asks for something to eat as soon as he enters the home. Yesterday, I made vegetable pasta for his dinner.

Our family is fond of pasta. Yesterday, I prepared pasta with arrabiata sauce, a warm cold weather comfort dish. Reduced the amount chilli flakes that went into the pasta keeping in mind Nehal is not into much spicy food. Use fresh parsley or coriander which make a difference to the pasta dish so don’t skimp on the leaves. Makes for a satisfying evening tiffin or dinner.

Nehal likes pasta which is usually prepared as an evening tiffin or dinner for him. I think pasta is a great way to use left over cooked vegetables or meat. There are numerous varieties that I prepare using left over curries or stir fries. If you have chopped mixed vegetables lying in your fridge, use them to create a creamy pasta like I did with this recipe.
