Cheesy Vegetable PastaThese days Nehal is back from tennis class earlier than usual since he’s scheduled for late afternoon class this winter season. Usual dinner time is 6.45 pm but with change in schedule, dinner has to be served by 6.15 pm since he’s home hungry and asks for something to eat as soon as he enters the home. Yesterday, I made vegetable pasta for his dinner. |
Left Overs ~ Bread UpmaUsed up half a loaf of left over bread to prepare upma for breakfast today. Took me exactly 12 mts to serve breakfast. The key to a good bread upma is to use stale bread (at least 3 days old) and place in a few tbsps of curd for a few minutes before preparation. Ensure the bread does not get soggy. |
Khatta DhoklaWe enjoy Dhokla as an evening tiffin or dinner. Its light on the stomach and delicious. Yesterday for dinner I made Khatta (meaning ‘sour’) Dhokla. The chutneys that went along with it were green chutney and tomato chutney. |

Mince Meat Pattie (Burger)Another favorite of Nehal is this mince meat burger. Whenever I cook kheema, I set aside a portion to prepare pattie/burgers or kheema sandwich. |
Chocolate MuffinsThe light drizzle outside and a cool breeze made me want to bake. Decided on baking chocolate cupcakes which happen to be Nehal’s favorite. Within half an hour of entering the kitchen, I was done with warm chocolate-y cupcakes that I served with milk for Nehal’s breakfast. |
