Vegetable Cheese Sandwich with Caramelized Onions

One of Nehal’s and Satish’s favorite sandwich recipe that is very simple and quick to make.

Toast two slices (on one side only). Apply eggless mayo to an un-toasted bread slice. Layer lettuce leaves and tomato slices. Place an un-toasted bread slice over it. Over this slice, place a cheese slice. Layer cucumber slices, lettuce leaves and caramelized onions and cover with the other toasted slice. (To caramelize onions, saute a sliced onion and a tbsp of brown sugar in a 1/2 tbsp of olive oil till brown).

    Dear Sailu

    I had left a comment here a few days ago, it hasn’t turned up yet.

    Could you please aleast let me know how many bread slices have been used in the above recipe? It says toast 2 bread slices, but then the recipe uses 3 bread slices, 2 un-toasted slices and a toasted slice:

    1. An untoasted slice on which mayo is applied followed by layering of tomato and lettuce
    2. Another untoasted slice which is to cover the first slice, followed by layering on cheese, onions and veg
    3. A toasted slice that goes on top of the above.

    I would appreciate some clarification. Thanks for the recipe.

    Yummy Sandwich.. The brown lines are perfect. I wish I can grab this sandwich and enjoy for breakfast. Healthy and yummy snacks for kids..:)
    BTW Saliu garu where did you toast the bread to get those perfect brown lines on the sandwich?

    I have a sandwich toaster with grooves which lend those brown lines to the sandwich. :)

    You toast one side of two bread slices and one bread slice need not be toasted.

    hi sailu, which brand mayo has to be used for this ? i have tried purchasing a number of varieties, but none of them tasted perfect.. could you pls suggest a brand that makes good eggless and egg mayo ??
