Zebra Cake

This recipe is long overdue. For Christmas I had prepared a Zebra cake following Farida’s step by step zebra cake pictorial. An impressive cake that turned out delicious.

Since I used a small cake pan, only half of the batter could be accommodated, hence I made two small cakes with the below recipe.

Zebra Cake Recipe

Preparation: 15 mts, Baking: 40 mts

Ingredients:

4 large eggs

1 cup sugar

1 cup milk

1 cup oil (corn, vegetable or canola)

2 cups maida/all-purpose flour

1 tsp vanilla essence

3 tsps baking powder

2 tbsps dark cocoa powder

1 Combine eggs and sugar in a bowl till light and creamy. Add milk, oil and vanilla essence and beat till smooth.
2 In a separate bowl, combine maida and baking pwd. Slowly add the dry ingredients to the wet ingredients and beat until the batter is smooth and the dry ingredients are completely incorporated. Do not overbeat.
3 Divide the batter into two. Add the cocoa pwd to one portion and combine well.
4 Preheat the oven to 180C. Grease the baking pan. The most important part is assembling the cake batter in a baking pan. Pour 3 heaped tablespoons of plain batter into the middle of the baking pan. Then pour 3 tablespoons of cocoa batter in the center on top of the plain batter. Continue alternating with plain and cocoa batter without pausing for the batter to spread.
5 Bake for 40 minutes. Insert a toothpick into the center of the cake it should come out clean when ready. Remove from the oven. Run a small thin knife around the sides of the pan to loosen the cake. Leave aside for 15 mts and invert the cake onto a cooling rack. Turn the cake back over and cool further.

    I tried this recipe today as my son was asking for a cake. I showed him this picture and he instantly liked it. Cake was ready within 45min and the result was awesome. I wish I can send you a picture of mine. I used milk chocolate so it was a lil bit lighter but the taste is so good. Actually he asked me for a second piece. Thank you so much. Please keep more nutritious and yummy recipes coming.

    whenever i try to bake a cake i am not sure how it would come , i failed many times in getting a nice fluffy cake.and i was successful a couple of times.i use home made butter,and beat the batter with a blender.but some times my cakes simply refuse to raise.they come out o.k. when i set the temp to 250 c initially and then reduce it to 200.for normal sponge cakes. i tried baking orange pound cake at 185 c as given in your recipe but it did not raise well..my doubt is if cake loaf tins are better than cake pans ..my cakes raise well sometimes and then fall again….please help..i use otg type oven it is has good temperature control…..

    Kalyani garu, the reason for the cake not to rise could be due to ingredients not at room temp esp eggs and butter. Use room temp ingredients and good quality baking pwd. For the cake rising and falling, maybe you are not beating the batter as required. Do not over beat or under beat. Use right amount of ingredients esp baking pwd and precise baking temp.

    Preethi, I am using dark cocoa pwd that was sent to me by my sister from US. You can find it at Karachiwala, Siripuram.

  7. Thanks Sailu, I made Brownies today, used Hersey’s Cocoa powder instead of local Indian brands I used earlier… the brownies were yummy.
    Can’t wait for the extra dark cocoa powder to get here from the US. I have everybody who comes to Vizag from US getting me a pack.
    Tried the Banana Walnut Bread last week, excellent recipe.
    Next on my list are the Orange Pound cake and Lemon Cake.

    Do you have any tips regarding Icing a cake. Can you please share them?

    i kept 40 min and it become little bit dry ,(probably for my oven 35 min is enough ).
    but the taste is awesome.
