Honey Roasted Almonds
Getting Nehal to eat nuts is not easy. Its a morning ritual to eat 4 almonds (soaked in water overnight and peeled the next morning) after breakfast. At times I oven roast whole almonds toss them with brown sugar, honey and olive oil. Of late, he is eating assorted honey coated nuts like walnuts, almonds, pistachios and cashew nuts that I pack for his mid morning snack at school.
Yesterday, I made Honey roasted almonds which I seem to snack on more than Nehal.
Line a baking tray with foil and spread a cup of almonds and bake at 175 degree C for 10-12 mts, stir once in between. Remove and cool. Heat a vessel, add half a tbsp of olive oil, a tbsp of water and a tbsp of honey, as the bubbles form, add the almonds and combine well. Allow to cook for 2 mts till the liquid is completely absorbed by the nuts. Turn off heat. Sprinkle 3-4 tbsps of brown sugar and combine such that the almonds are well coated. Add a pinch of salt (optional). Remove onto the baking sheet to cool. Store in an air tight container.
