Banana Bread

Over the weekend, I made Banana bread. Lovely recipe! The golden crust has a delicious crispness to it and bread is wonderfully moist and soft. One of my favorite Banana Bread recipe. And its super quick to bring together.

Banana Bread Recipe

Preparation: 10 mts, Baking: 40 mts

Ingredients:

1 1/4 cup all purpose flour/maida

1/2 cup atta/whole wheat flour

1 cup brown sugar

3/4 tsp cinnamon pwd

2 large eggs, lightly beaten

1 tsp vanilla extract

3 mashed bananas

1/2 cup melted and cooled butter

1/2 cup toasted, coarsely chopped walnuts

1/4 tsp salt

1/4 tsp baking soda

1 tsp baking pwd

1 Preheat oven to 180 C. Grease and flour a loaf pan.
2 Combine maida, whole wheat flour, baking pwd, baking soda, salt, cinnamon pwd and sugar in a bowl.
3 In another bowl, combine mashed bananas, cooled melted butter, eggs and vanilla essence.
4 Using a wooden spoon, lightly fold in the wet ingredients into the dry ingredients until just combined. Add the nuts, combine and you have a thick batter. Do not over mix the batter.
5 Pour batter into a greased and floured loaf pan. Bake in preheated oven for 50-55 mts or till a toothpick inserted into the bread comes out clean. Place on a wire rack to cool, slice and serve warm.

    Yes, its possible to prepare an eggless banana bread. I am planning to prepare next week.

    i tried this but my bread was soggy :( ..is it bcoz of the bananas?
    Also plz clarify the 2 doubts i have
    When u say 1 cup, is it 240ml? this is what we mean here in USA.
    i have a small suggestion- plz mention whether the temp is deg celsius or degree Fahrenheit in recipes where you use oven

  3. Reduce the amount of banana puree. Yes, 240 ml is 1 cup.
