Chocolate Muffins

The light drizzle outside and a cool breeze made me want to bake. Decided on baking chocolate cupcakes which happen to be Nehal’s favorite. Just 10-12 mts of preparation work and 20 mts of baking, I was done with warm chocolate-y cupcakes that I served with milk for Nehal’s breakfast.

Chocolate Muffins Recipe

Preparation: 10 mts, Baking: 20 mts

Ingredients:

1/2 cup butter, room temp

1 cup sugar

2 eggs, room temp

3/4 cup all purpose flour/maida

3/4 tsp baking powder

1/4 tsp baking soda

pinch of salt

1/2 cup unsweetened cocoa powder

1/2 cup milk

1 tsp vanilla essence

1 Preheat oven to 180 degrees. Sieve flour, baking powder, baking soda, salt and cocoa powder and keep aside.
2 Combine the milk and vanilla essence in a bowl and keep aside.
3 In a large bowl, beat butter until softened, add sugar and combine until light and fluffy, approx 2 mts. Add eggs one at a time and whisk until well combined.
4 Add half of the dry ingredients (flour mixture) to the butter-sugar mixture and combine. Next add half of the milk mixture and combine. Continue adding, alternating between the wet and dry and combine well.
5 Spoon the batter into cupcake liners about 2/3’s full. Bake the cupcakes at 180 degrees for 20-22 mts or until a knife inserted comes out clean.

  2. Can you imagine, my son is after my life for chocolate muffins. I have bought some chocolate chips too which are lying in our fridge. But was looking out for a nice recipe. This looks yummy and AKSHIT ( is almost of Nehal’s age 6+ ) is going to enjoy this. I can add those chocolate chips right??????? Thank u so much sailu :-)

  3. Hi Sailu,
    All your dishes look mouth-watering and I browse through them just to find inspiration for cooking.
    I want to bake biscuits, but the oven I have is a OTG. It has two heaters, and only settings are up heater or down or both heaters. How am to find the temperature? When I had cooked biscuits once, I put on both heaters and the butter inside the dough just melted.
    Can u help me out? Thanks a lot.

    I am really not sure how to decipher an OTG like the one you mentioned.
