Vegetable Pattie
Nehal’s favorite evening snacks are patties, both vegetable and mince meat, served with tomato ketchup. I use the left over patties to prepare burgers. Will post vegetable burger recipe tomorrow.
Vegetable Pattie Recipe
Prep & Cooking: 30 mts

Ingredients:
2 potatoes, boiled and mashed
1 grated carrot
fistful boiled green peas, mashed
few blanched french beans, finely minced
1 1/2 tsps ginger-green chilli paste
1 tsp coriander pwd
small pinch garam masala pwd
1 1/2 tbsp roasted peanut pwd
3 brown bread slices, dip in water, immediately remove, squeeze out water and crumble
1 1/2 tbsps coriander leaves, chopped
salt to taste
olive oil for shallow frying
For coating:
3-4 tbsps roasted sesame seeds
1 Combine mashed potatoes, green peas, grated carrot, french beans, crumbled bread, green chilli-ginger paste, coriander pwd, garam masala pwd, peanut pwd, salt and coriander leaves. Prepare large lemon sized balls and flatten to form a pattie shape. Sprinkle toasted sesame seeds all over on both sides and keep aside.
2 Drizzle olive oil over a hot tawa. Place two patties on the tawa and shallow fry on medium flame on both sides till they turn golden brown. Remove onto absorbent paper, then place on a baking sheet and keep in a warm oven till you serve them. This will ensure that the outer crust stays crisp. Or use the patties to prepare vegetable burgers.
3 Serve hot with tomato sauce or green chutney.
Variation: You can add finely chopped spinach or methi leaves or cooked spinach paste along with the rest of vegetables.
