Aloo Paratha

Aloo Paratha Recipe
Prep & Cooking Time: 30 mts
Serves 3-4 persons

2 cups atta/whole wheat flour/godhuma pindi
pinch of salt (optional)
enough water to prepare a soft dough
For stuffing:
2 boiled potatoes, mashed
1 tbsp chopped coriander leaves
1 1/2 tsps coarsely crushed ginger-green chillis
1/2 tsp coriander pwd or coarsely crushed coriander seeds
pinch of amchur pwd
salt to taste
1 Prepare a soft pliable dough of the atta and allow to sit for 3-4 hrs (minimum an hour). Prepare the potato stuffing by combining all the ingredients called for the filling.
2 Pinch off large lemon sized balls from the dough. Dust some flour on the working surface and roll each ball to about 3-4″ in diameter. Place a tbsp of stuffing in the center and enclose it by folding along the sides and sealing on top.
3 Heat a tawa and place on low flame, and prepare the parathas. Dust the working surface and roll out a thick paratha and place on the hot tawa. Increase flame to high and cook on both sides till brown spots appear and the paratha is cooked. Drizzle ghee on both sides and serve hot with yogurt and pickle of your choice.
