Eggplant Baked Beans Crostini
A lovely finger food that is sure to have your guests asking for more. If I have a party for Nehal’s friends at home, I am sure to serve this as a starter. Of course, you can have numerous toppings but do include pan fried eggplant as one of the toppings.
You can pan fry the eggplants. I usually like to broil the sliced eggplants for a few mts and pan fry with a little olive oil till golden brown. Easy to assemble together. Use a cookie cutter to cut the brown or whole wheat bread slices into circles. Lightly toast, place pan fried eggplant, season with salt and pepper, place a large tbsp of baked beans, sprinkle some chopped onions and capsicums and serve.
No need to toast the bread before placing the toppings if you are adding grated cheese as a final topping. Since you have to toast the crostini till cheese melts.
