Sweet Ragi Malt
Calcium rich finger millet is grown extensively in Andhra and is revered in our home. During our growing years, my Ammamma would prepare ragi porridge and lovingly feed us mid morning. My fondest childhood food memories are Ammamma preparing a variety of health drinks with ragi. I am re-living those warm and happy memories by preparing and relishing a popular ragi recipe we kids loved. Its a jaggery flavored sweet ragi porridge that even Nehal is fond of. Very simple to prepare and can be eaten warm or cold.
Sweet Ragi Malt Recipe
Prep & Cooking: 10 mts
Serves 2
.
2 heaped tbsps raagi powder
1/2 cup milk
3/4 cup water
2 tsps badam pwd
1 1/4 tbsps jaggery syrup (adjust)
pinch of elachi/cardamom pwd
1 Add a little cold water to the ragi pwd and make a smooth paste and keep aside. Heat water and milk in a stainless steel vessel and when it begins to boil, add this paste and stir continuously to avoid any lumps.
2 Add jaggery and badam pwd. Continue stirring on medium flame and you will find that it thickens. After 3-4 mts, add the cardamom pwd and continue stirring for a mt and remove from heat. Serve warm or cold.
For pouring consistency, increase the amount of water. You can even add pureed dates, cashewnut and pista powder.

Hi Sailu,
Good old memories of my Ammamma preparing the same…though we used to eat with Palm jaggery. I will try out your recipe too but it sure looks yummy.
Chandra - you can get all kinds of powder/flour in your local Indian store. Try out there.
