Potato & Egg Sandwich

One of my favorite and frequently used kitchen tool is a stove top sandwich toaster. My mother used it during our growing years to prepare tasty sandwiches for us. Its very useful and takes less than 2-3 mts to make a nice toasted sandwich provided you have the filling ready.

Nehal wanted me to pack a sandwich for his school snack. He ate cornflakes and milk for breakfast so I decided to pack a sandwich using potatoes and egg for his mid day snack at school. When ever I boil potatoes to prepare aloo paratha or a potato curry for masala dosa or puri, I boil a few extra potatoes and refrigerate. It was one such day when there were some boiled potatoes lying in the fridge which I put to use this morning.

 

Heat olive oil on a tawa, once hot, break an egg and let it cook for a half a mt. Season with salt and white pepper pwd and flip over the other side slowly and let it cook for a half a mt. Remove from heat and keep aside. Take two slices of brown bread, spread low fat butter on one side of each slice. In between these slices of bread, place the half of the cooked egg, then place thin boiled potato slices, season with salt and white pepper, sprinkle grated cheese, place the other half of the cooked egg on top. Place in sandwich toaster with buttered side facing up. Cook for a mt on each side. Toasted egg sandwich is ready!

You can replace the cooked egg with boiled egg slices.

  3. Woooow.. Thats an intresting tool to be in the kitchen. Is it readily available or you got it done like your other tools?
    Though i dont eat eggs, this sandwich looks great!
    i tried the other cheese toast and cheesy vegetarian triangles in the oven and they came out pretty good.
    Thanks for sharing your ideas. I am getting more interested in the kidzone than the regular blog these days!

  4. I really love these sandwiches. But I find that everytime I have packed them for my son, they become soggy and soft by lunch time. All the crispness of the toasted sandwich goes away and it becomes a bit leathery. Any ideas how to retain the crispness?

    Your welcome. I wish I knew the answer to your question. Unfortunately, toasted sandwiches when packed become soft after a while. Usually I wrap in an aluminium foil and pack in the snack box.

    Thanks for great recipe. Only trouble is the bread I make in my sandwich maker (exactly like yours) sticks and is ruined. I do oil it a bit before using it but no use :( any suggestions?

    It does happen sometimes to me too, Jain. Season the mould with oil and leave overnight and try.
