Peanut Butter Cookies

Yesterday I baked peanut butter cookies. I used brown sugar. The original recipe also called for 1/4 cup granulated white sugar which I omitted. And I rolled the cookie dough ball in sugar before baking. Verdict – very good cookies.

Peanut Butter Cookies Recipe

Preparation: 10 mts, Baking: 15 mts

Ingredients:

1 1/2 cups all-purpose flour/maida

pinch of salt

1 tsp baking soda

8 tbsps butter, room temp

1 cup packed light-brown sugar

1 large egg

1 tsp vanilla essence

1 cup peanut butter

1 Preheat oven to 350 degrees. Prepare a baking sheet with parchment paper.
2 Sift together flour, salt and baking soda, and set aside. In the bowl, beat together butter and sugar until light and fluffy. Add egg and vanilla, and beat until well combined. Add peanut butter, and beat until smooth. Add flour mixture, mix until combined.
3 Prepare small balls out of the dough, roll in sugar and place on cookie sheet with 2″ apart.
4 Bake for about 15-18 mts till the edges are slightly toasted or till done.
6 Cool on a wire rack. Repeat with remaining dough. Store in airtight container.

I would be grateful if you would clarify if the balls should be flattened out after they are rolled in sugar. From your photo, we can see flat cookies. Hence, the question. Thank you once again for your recipes.
