Pasta in Arrabiata Sauce

Our family is fond of pasta. Yesterday, I prepared pasta with arrabiata sauce, a warm cold weather comfort dish. Reduced the amount chilli flakes that went into the pasta keeping in mind Nehal is not into much spicy food. Use fresh parsley or coriander which make a difference to the pasta dish so don’t skimp on the leaves. Makes for a satisfying evening tiffin or dinner.

Pasta In Arrabiata Sauce Recipe

Preparation: 30 mts

Serves 3-4 persons

Ingredients:

4 cups boiled pasta (penne or fuselli)

1/2 cup broccoli or cauliflower (optional) - cut into small florets, blanch, strain

1 tbsp grated cheese

For Arrabiata Sauce:

2 tbsps olive oil or butter

1 onion, finely chopped

3-4 garlic flakes, crushed

5 large tomatoes, blanched, skinned, pureed and sieved

small green or red bell peppers, finely chopped

4-5 tbsp finely chopped fresh parsley or coriander

1 tsp mixed dried herbs or oregano

2 tbsps tomato sauce

1 tsp brown sugar

1/4 tsp freshly ground pepper

1/4 tsp red chilli flakes

salt to taste

a little less than 1/2 cup low fat milk

1 Cook pasta in salted rapidly boiling water, 2 tsps of salt and a tbsp of oil until it turns soft yet firm. Remove from heat and let the pasta remain in the water for 3 mts. Strain. Add cold water and strain again. Leave the pasta in the strainer for 12-15 mts. Sprinkle a tbsp of olive oil and keep aside. Meanwhile prepare the sauce.
2 Heat olive oil in a vessel, add the onions and crushed garlic and saute till transparent. Add the bell peppers, half of the chopped coriander leaves and salt. Combine.
3 Add the tomato puree, oregano, tomato sauce, pepper and salt. Add red chilli flakes and cook for 6-8 mts, stirring once in a while, over low heat. Add the remaining coriander leaves and cook for another mt. Turn off heat and cool.
4 Add milk slowly stirring continuously and keep the prepare sauce aside.
5 At the time of serving, heat sauce, add pasta and cauliflower and combine well. Turn off heat and remove onto serving bowl. Serve topped with grated cheese.

  1. yum! and I love that you have vegetable goodness in there. We are always trying to find new and interesting (and tasty!) ways to get healthy.

  3. Another way to cook pasta, espcially for kids:
    Place pasta in pressure cooker and pour water enough to immerse pasta in it. Add salt. Cover with the lid and whistle on and cook pasta until at least 8-10 whistles come. Once cool, remove the lid and drain the remaining water. Do not rinse with cold water. In stead, mix with pasta sauce immediately.

    I used to cook pasta in open pot of boiling water but pasta would still turn a bit hard. My husband told me once that he would prefer softer pasta. THis worked greatly and my 2 yr old daughter finished the serving from her plate easily.
