Egg Dosa, Egg Paratha & Roti Omelette

Finding different ways to use eggs in Nehal’s breakfast is quite a task. If time permits I try to add a new twist to an existing recipe and sometimes it works and sometimes it doesn’t.

Few days ago, I posted a few breakfast ideas using bread and eggs. Continuing on that post, here are a few more quick and easy ways to incorporate eggs into your kid’s breakfast ~ Egg dosa, Egg paratha and Omelette roti.

Egg Dosa

Egg Dosa ~ Heat tawa, prepare dosa, drizzle oil along the edges. Beat an egg with salt and pepper and pour over the dosa. Cook over medium heat till the egg is almost cooked and the dosa is browned. Flip over and cook the other side for a few seconds. Serve hot.

Egg Paratha ~ Prepare chapati dough, keep aside for 15 mts. Pinch a large lemon sized dough and roll out a roti of 4″ diameter. Spread low fat butter over the roti and sprinkle atta. Fold the roti into half. Again spread butter on the semi circle half, sprinkle atta. Fold into a triangle. Roll out a chapati. Meanwhile beat an egg with salt and pepper and keep aside. Heat a tawa and roast the chapati on both sides lightly. Remove the center (like opening a page of a book). Pour the beaten egg in the center and cover the chapati. A little egg will spill over through the center and that is ok, no problem. Let it roast. Spread oil on top and flip and cook on both sides till well roasted and the egg cooks inside. Serve hot.

Omelette Roti ~ Prepare a round roti and lightly roast on both sides. In a bowl, beat an egg with chopped onions, pepper or chilli pwd, salt and chopped veggies if any. After the roti is well roasted on one side, pour the egg mixture over the roti. Slowly flip the roti and once the omelette is cooked, flip the other side and roast till well browned. Roll into a kathi roll or into 4 pieces like you would cut a pizza and serve.

  1. Sailu,

I knew about your regular blog just found this one!! I make similar kind of roti/paratha/dosa preparations with egg for my little twin boys after a lot of trial and error. I add tomato sauce/paste to the egg which gives it a puffy tangy twist! Well I am guilty of putting a lot of different things in the eggs – hot sauce, chopped spinach, veggies cooked and mashed. Oh, always top it with shredded cheese!!! Hope someone tries them out and likes them.

I am so excited I have found you, I have been looking for something like this – something tried and tested! Thanks!
