Today, I had a fun baking session with Nehal. Prepared sesame cookies shaped like sticks. It was fun baking with my 6 year old assistant who helped roll the cookies into small logs and sesame seeds. Nice recipe that is not overly sweet with a lovely cinnamon flavor.
Sesame Cookies Recipe
Prep:10 mts, Chilling: 10 mts, Baking:20 mts
2 cups maida/all purpose flour
1/2 cup whole wheat flour
1 cup butter
1/4 cup sugar
1/2 cup brown sugar
1 egg at room temp
1/4 teaspoon baking powder
1 1/2 tsp cinnamon pwd or cardamom pwd or fennel seeds pwd
large pinch of salt
3/4 cup sesame seeds
1 Preheat oven to 175°C. In a large bowl, cream together the butter and sugar until smooth. Beat in the egg and cinnamon pwd until well blended. Sift together the flour, whole wheat flour, baking powder and salt. Stir into the butter mixture until well incorporated. The dough will be soft but will hand roll easily.
2 Pinch off pieces of dough slightly smaller than a walnut and roll them into small logs. Roll in sesame seeds. Place cookies one inch apart on a baking tray, Cookies will not spread very much.
3 Bake for 20 mts or until bottom and sides of cookies are lightly toasted. Remove from cookie sheets to cool on wire rack. Store in an airtight container at room temp.
